Ingredients:
- Paneer (50 grams)
- Soya chunks ( 1.5 cup)
- 1/2 carrot
- 1/4 yellow bell pepper
- 1/4 red bell pepper
- 15-20 spinach leaves
- 1 medium sized tomato
- 1 medium sized onion
- Beetroot (small piece)
- Cabbage (small piece)
- 5-6 garlic cloves (finely chopped)
- Salt, black pepper, curry leaves, basil, soy sauce, olive oil.
Recipe;
- Finely chop all the vegetables. Boil soya chunks in water for 1 minute and make a paste of soya chunks.
- Heat 1 tbs oil in a pan and add garlic. Cook it for 30-40 seconds and add onion. Cook till they are soft.
- Add curry leaves and cook for 20 seconds to add the flavour. Now add all the chopped veggies. After cooking the veggies for 2 mins, add 2 cups of water and cover the pan and let it cook for 5 mins.
- Add the soya paste and paneer. Mix it and let it cook for another 5 mins.
- Add salt, black pepper, basil and any other seasoning you like with a tbs of soy sauce.
- Cook for another 2 mins.
- Garnish with spring onion and your soup is ready.
